Lemonade Spritzer

Pop has lots of empty calories and reducing your intake
of soda will result in slenderizing effects.  My mother used
to mix sparkling water with juice concentrate but if you
want a bubbly drink with minimal calories, try this recipe.
You can also omit the sugar for a sugar and calorie free
spritzer.

True Lemon is crystallized lemon in a packet and
is convenient to carry in your purse or gym bag.  They
also carry True Lime and True Orange.

8 oz. Perrier or Canada Dry Seltzer Water
1-2 packets True Lemon
2 teaspoon sugar

Mix True Lemon packets with sugar or
sweetener.  Pour 2 oz. of sparkling over
powder mixture to dissolve.  Add remaining
sparkling, mix and add ice.  Garnish with fruit
wedges for special occasions.

Brandy Alexander Anybody?

Holiday spirits come in a wide variety!
Try this instead of the usual eggnog mix.

1.5 oz brandy
1 oz cream
1 oz dark creme de cacao
sprinkle nutmeg, cocoa sprinkles or cinnamon on top

Linda's Fried Cabbage

This recipe came from my mother's kitchen, I don't remember
her using a recipe but when she initially made this for me, I had
never seen purple cabbage before.  She usually adds some type
of chicken sausage that she grills or roasts separately.  My aunt
is a vegetarian and she appreciates this dish-without the meat
when she visits us.

  • 1 large head of purple cabbage, quartered then sliced thin
  • 1 large Vidalia sweet onion, chopped
  • 2 garlic cloves, crushed on thinly sliced
  • 1 pack of shredded rainbow veggies
  • 1/4 cup Cento Olive Oil
  • Real Sea Salt
  • Pepper
  • Lawry's Seasoning Salt
Begin cutting the cabbage in half and then cut each section in
half again.  Cut out the core and begin slicing the cabbage
in thin sections similar to shreds.  Rinse all vegetables to get
the grit and dirt out.  In a large skillet or dutch over, add the
olive oil, onions and garlic.  Cook for about 5 minutes.

Add the cabbage to the skillet gradually, turn the heat up and
stir.  Cover and let simmer for 15 minutes.  Add the rainbow
veggies which should consist of shredded carrots, broccoli and
cauliflower.  Stir and let simmer until the cabbage is tender but
not soggy.

Season to taste with the seasonings.  You can also add real
bacon bits or smoked sea salt if you are vegetarian.

Another variation of this recipe, you can use green cabbage
and red onions or shallots.

Savory Turkey & Veal Meatloaf

Meatloaf has always been a favorite but when we
decided to reduce our intake of beef, a turkey loaf
didn't have that satisfying edge that the ground beef
loaf had so we decided to try other concoctions and
the veal with a few choice ingredients did the trick!

Topping:

Preheat oven to 375 degrees F, 350 degrees if your oven gets super hot!
Mix all meatloaf ingredients well and place in a loaf pan, press even.
Mix ingredients for topping and spread on top of loaf. Bake for 45 minutes to 1 hour.

Chocolate Espresso Latte

Our family always has such a wonderful gathering of goodies
that I have decided to compile a cookbook of favorites.  Here
is a recipe that will save you a trip and some bucks if you like
coffee shop specialties.

1 teaspoon of Medaglia D'oro instant espresso coffee
2 teaspoons of Green & Blacks or Dagoba organic cocoa powder
2 teaspoons of Florida Crystals Organic or Demerara Sugar
3-4 oz of boiling water
2-3 oz of Horizon or any other organic half and half
Whipped Cream (optional)

Mix the dry ingredients together.  Add the boiling water and mix
to dissolve the cocoa and sugar.  Finish by adding the half and half.
Decorate with whipped cream, cocoa sprinkles, white chocolate
sprinkles or your favorite topping.
